This sweet, tangy tender pork—known as the other white meat– is sure to please even the pickiest of eaters. This pork dish is pleasing to the palate because of its perfect balance of mildy sweet Ohgave! nectar combined with citrusy tart fresh limes. The zippy, pungent flavor of ginger adds to its complexity, and the sprinkle of chili flakes is like icing on the cake! Enjoy with your favorite grilled sides.

2 to 3 tablespoons of Ohgave! nectar
4 tablespoons of juice from fresh limes
2 tablespoons fresh ginger root, peeled and finely slivered or chopped
    2 tablespoons soy sauce
    Red chili flakes to taste

2 pounds pork loin roast or pork tender loin
2 to 3 teaspoons of oil

Whisk all marinade ingredients together except 2 tablespoons of Ohgave! nectar and rub meat with mixture on all sides. Refrigerate covered for 48 hours. Turn roast on all sides over time so marinade spreads evenly. Strain all marinade liquid through a fine sieve into a saucepan and bring to a quick boil. Turn heat down to medium and bit by bit remove and discard foam formed by boiling the sauce. Reserve warm. Drop a couple of teaspoons of oil into a hot skillet and start roasting the pork on all sides. Season with salt. Turn down heat to medium. Finish roasting meat in covered skillet till done (20 to 30 minutes). Remove meat and keep warm. Add marinade reduction and the extra 2 tablespoons Ohgave! nectar to skillet and bring to a boil. Reduce sauce till thickened and pour over sliced roast. Serve with steamed rice and vegetables
