Power Breakfast Chia Seed Pancakes with Spiced, Caramelized Apples

Serves 4 – 6
These pancakes combine fiber-rich oat flour with the nutrient dense superfood, chia. Chia is full of Omega 3s, antioxidants, and fiber, making it an ideal food for breakfast. Great for pre-workout, kid’s breakfast or even as a snack throughout the day! Delicious simply with Ohgave! Maple Agave Nectar or the spiced apples that are quick and easy to make.
2 egg whites, beaten
1 cup plain, nonfat yogurt
¼ cup water
1 tablespoon light Ohgave! nectar
½ teaspoon vanilla extract
1 tablespoon extra virgin olive oil
1 cup whole oat flour
3 tablespoons chia seed, ground
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon cinnamon
pinch of sea salt
Mix egg whites, yogurt, water, Ohgave! nectar, vanilla and olive oil in a large mixing bowl. In a separate bowl, mix together all dry ingredients. Add dry ingredients to the wet and mix well. Drop approximately ¼ cup onto a large, lightly oiled skillet. Cook over medium heat for 2 – 3 minutes. Flip and cook until golden brown.
Spiced, Caramelized Apples 
3 firm, cooking apples (Cortland, McIntosh, Granny Smith), peeled, cored and sliced
2 tablespoons unsalted butter or butter substitute
1 teaspoon cinnamon
¼ teaspoon nutmeg
½ teaspoon vanilla extract
½ cup amber agave nectar
Melt butter in a large sauté pan. Add apples and sauté over medium heat until apples soften or until mixture thickens and apples are soft, about 4 – 5 minutes. Add spices and agave nectar and cook together for 2 –3 minutes more.
